  • 2 tbsp instant espresso powder
  • ½ tsp salt
  • 2 tsp baking powder
  • ½ tsp baking soda
  • ½ cup unsalted butter (cold and cut into small pieces)
  • ¾ cup mini semi-sweet chocolate chips
  • 1 cup heavy whipping cream (cold)
  • 1 tsp pure vanilla extract
  • 1 large egg (room temperature)
  • 1 tbsp heavy whipping cream (for glaze)
  • 1 cup powdered sugar (sifted)
  • 1 tsp instant espresso powder (for glaze)
  • 1 tbsp brewed coffee (or espresso)
  • 12 tbsp milk or cream (or water)

Instructions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, brown sugar, baking powder, salt, and espresso powder.
  3. Cut cold butter into the dry mixture until it resembles coarse crumbs. Stir in chocolate chips.
  4. In another bowl, whisk together vanilla extract and heavy cream; pour into the dry mixture in two parts and mix until just combined.
  5. Turn dough onto a floured surface and shape into an 8-inch circle; cut into 8 triangles.
  6. Chill the triangles on the baking sheet for at least 30 minutes before baking.
  7. Bake for 20-25 minutes or until golden brown.
  8. While your scones cool, mix sifted powdered sugar with espresso granules, brewed coffee, and cream until smooth for the glaze.
