  • 1 lb ground beef (80% lean)
  • 1 small onion (diced)
  • ½ cup bell pepper (diced)
  • 3 cloves garlic (diced)
  • 1 packet chili seasoning mix
  • 1 tablespoon tomato paste
  • 8 oz tomato sauce
  • 14.5 oz can diced tomatoes (undrained)
  • ½ cup chicken broth
  • 1 can kidney beans (drained)
  • 2 cups macaroni (uncooked)
  • 2 tablespoons butter
  • 2 tablespoons flour
  • ½ cup heavy cream
  • 1 cup milk
  • 1½ cups cheddar cheese (shredded)

Instructions

  1. Brown ground beef in a large pot over medium heat; drain excess fat.
  2. Add diced onion, bell pepper, and garlic to the pot; sauté until tender.
  3. Stir in chili seasoning mix, tomato paste, tomato sauce, diced tomatoes, chicken broth, and kidney beans; simmer for about 10 minutes.
  4. Cook macaroni according to package directions until al dente; drain.
  5. In another saucepan, melt butter over medium heat; whisk in flour to create a roux. Gradually add heavy cream and milk until thickened.
  6. Mix in mustard powder, onion powder, salt, pepper, hot sauce, and half of the cheddar cheese until melted.
  7. Combine cooked macaroni with chili mixture; stir in cheese sauce until well-coated.
  8. Serve warm topped with remaining cheddar cheese and fresh parsley.
