  • 4 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 2 cups fresh spinach, chopped
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced
  • 1/2 cup heavy cream
  • 1/4 cup chicken broth (or vegetable broth)
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. In a skillet over medium heat, add olive oil. Season chicken breasts with salt, pepper, and thyme; sear for 5-6 minutes per side until golden brown. Remove from skillet.
  3. In the same skillet, sauté minced garlic for 1 minute. Add sliced mushrooms; cook until softened (about 5 minutes). Stir in chopped spinach until wilted.
  4. Pour heavy cream and chicken broth into the skillet; let simmer for about 3-4 minutes until thickened.
  5. Place seared chicken breasts in the prepared baking dish and pour the creamy sauce over them. Top with mozzarella and Parmesan cheese.
  6. Bake for 15-20 minutes until cheese is melted and bubbly.
  7. Serve warm garnished with fresh parsley if desired.
