  • 1 lb cheese tortellini (fresh or frozen)
  • 1 lb thinly sliced beef steak (ribeye or sirloin)
  • 1 large onion, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 2 cups milk
  • 1 cup shredded provolone cheese
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste

Instructions

  1. Cook tortellini according to package instructions (3-5 minutes). Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Sauté onion and green bell pepper until soft (5-7 minutes).
  3. Push veggies aside; add beef steak seasoned with Italian seasoning, salt, and pepper. Cook until browned (4-5 minutes).
  4. In a separate saucepan, melt butter over medium heat; whisk in flour until smooth. Gradually add milk while whisking until thickened (3-5 minutes). Stir in provolone cheese until melted.
  5. Combine cooked tortellini with beef and veggies in the skillet; pour creamy sauce over and mix gently. Simmer for an additional couple of minutes.
  6. Serve hot, garnished with Italian seasoning or cracked black pepper.
