  • 1 large head cauliflower, chopped into florets
  • 1 (15-oz.) can chickpeas, rinsed and drained
  • 3 Tbsp extra-virgin olive oil
  • 2 tsp paprika
  • 1 tsp ground cumin
  • 1/2 cup tahini
  • Fresh cilantro leaves
  • Fresh parsley leaves
  • 2 Tbsp fresh lemon juice
  • 1/2 tsp minced fresh garlic
  • 1/4 tsp ground cumin
  • 1/4 tsp kosher salt
  • 1/4 tsp black pepper
  • Cooked basmati rice (or grain of choice)

Instructions

  1. Preheat oven to 425°F. Toss cauliflower florets and chickpeas with olive oil, paprika, cumin, salt, and pepper on separate baking sheets.
  2. Roast for 15 minutes until golden brown; toss halfway through.
  3. Meanwhile, blend cilantro, parsley, tahini, lemon juice, garlic, cumin, salt, pepper, and water until smooth for the Green Tahini Sauce.
  4. Assemble bowls with cooked rice as a base; top with roasted cauliflower and chickpeas. Drizzle with sauce before serving.
