  • 16 oz cream cheese (softened)
  • 1 cup granulated sugar (for cheesecake)
  • 3 large eggs (for cheesecake)
  • 1/2 cup sour cream
  • 1 cup granulated sugar (for caramel)
  • 6 tablespoons unsalted butter (for caramel)
  • 1/2 cup heavy cream (for caramel)
  • 1 teaspoon sea salt (for caramel)

Instructions

  1. Preheat oven to 350°F (175°C). Melt butter and mix with granulated sugar. Add eggs and vanilla.
  2. Sift together flour, cocoa powder, and salt; combine with wet ingredients until smooth.
  3. Pour brownie batter into greased springform pan and bake for 25-30 minutes.
  4. Beat cream cheese until smooth; add sugar, eggs one at a time, vanilla extract, and sour cream.
  5. Once brownie layer has cooled, pour cheesecake mixture over it and bake for another 30-35 minutes until set but slightly jiggly in the center.
  6. For caramel sauce, melt sugar over medium heat until golden brown; stir in butter and cream until smooth; add sea salt.
  7. Drizzle warm caramel over cooled cheesecake and refrigerate for at least two hours before serving.
