  • 1 teaspoon baking soda
  • 1 1/2 teaspoons baking powder
  • 1 teaspoon kosher salt
  • 5 tablespoons unsalted butter (softened) for filling
  • 3/4 cup light brown sugar (packed) for filling
  • 1 teaspoon cinnamon for filling
  • 2 tablespoons cake flour for filling
  • 1 cup powdered sugar for glaze
  • 1/2 teaspoon cinnamon for glaze
  • 3 tablespoons unsalted butter (melted and cooled) for glaze
  • 2 1/2 tablespoons milk for glaze

Instructions

  1. In a mixing bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Add eggs and vanilla; mix until combined.
  2. In another bowl, whisk together cake flour, cornstarch, baking soda, baking powder, and salt; gradually incorporate into wet mixture. Chill dough for one hour.
  3. Preheat oven to 350°F (175°C). Prepare baking sheets with parchment paper.
  4. For the filling, mix softened butter, brown sugar, cinnamon, and cake flour until smooth. Roll into balls.
  5. Scoop chilled dough; form wells in half portions, place filling inside, seal with remaining dough and roll gently.
  6. Bake for 11-13 minutes until golden but soft in the center. Cool on wire racks before glazing.
