  • 1 lb ground beef (80/20 lean-to-fat ratio)
  • 1 cup breadcrumbs
  • 1 egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 tablespoon olive oil
  • 1 cup BBQ sauce (without alcohol)
  • 1 cup shredded cheddar cheese
  • 4 sub rolls
  • 8 slices crispy turkey bacon

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix ground beef, breadcrumbs, egg, garlic powder, onion powder, smoked paprika, salt, and pepper until just combined.
  3. Shape the mixture into meatballs about 1.5 inches in diameter (16-20 meatballs).
  4. Heat olive oil in a skillet over medium heat and brown the meatballs for about 5-7 minutes.
  5. Add BBQ sauce to the skillet and let the meatballs simmer on low heat for about 10 minutes.
  6. Slice sub rolls lengthwise and toast them in the oven for about 5 minutes.
  7. Assemble subs by placing meatballs inside each roll and topping with cheddar cheese and turkey bacon.
  8. Return assembled subs to the oven for another 2-3 minutes until cheese is melted.
  9. Serve immediately with extra BBQ sauce on the side.
