  • 2 large eggs
  • 1 cup sugar
  • 1 tsp vanilla extract
  • 1 cup pumpkin puree
  • 1 1/4 cups chocolate chips (divided)

Instructions

  1. Preheat your oven to 350F.
  2. In a medium bowl, mix together flour, baking powder, baking soda, salt, cinnamon, cloves, and nutmeg.
  3. In a large bowl, whisk together cooking oil, eggs, sugar, vanilla extract, and pumpkin puree until smooth. Fold in one cup of chocolate chips.
  4. Gradually add the dry ingredients to the wet mixture until just combined; be careful not to overmix.
  5. Grease an 8" x 4" loaf pan and pour in the batter. Sprinkle the remaining chocolate chips on top.
  6. Bake for 50-60 minutes or until a toothpick inserted comes out clean. Allow to cool before slicing.
