  • 1/2 medium yellow onion (finely diced)
  • 1 tablespoon minced garlic
  • 1 can pinto beans (15 oz., drained and rinsed)
  • 1 can kidney beans (15 oz., drained and rinsed)
  • 1 can tomato sauce (15 oz.)
  • 1 can diced tomatoes (15 oz.)
  • 3 tablespoons tomato paste
  • 1 tablespoon maple syrup
  • 3 tablespoons chili powder
  • 2 teaspoons garlic powder
  • 2 teaspoons ground cumin
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 cup beef broth

Instructions

  1. In a large stockpot over medium-high heat, brown the ground beef with diced onion and minced garlic for about 7–10 minutes until fully cooked.
  2. Stir in the pinto beans, kidney beans, tomato sauce, diced tomatoes, tomato paste, and maple syrup until well combined.
  3. Add chili powder, garlic powder, cumin, smoked paprika, salt, pepper, and broth; mix thoroughly.
  4. Bring to a boil, then reduce heat to low and simmer uncovered for 10–15 minutes until thickened.
  5. Serve in bowls topped with shredded cheddar cheese and green onions.
