  • 2 pounds stewing beef (chuck or round)
  • 1 large onion (diced)
  • 3 cloves garlic (minced)
  • 3 medium carrots (chopped)
  • 2 stalks celery (chopped)
  • 5 medium white potatoes (quartered)
  • 3 cups low sodium beef stock
  • ½ cup apple vinegar
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 325°F (160°C). In a large Dutch Oven, heat olive oil over medium-high heat.
  2. Season stewing beef with salt and pepper. Brown in batches until caramelized; set aside.
  3. In the same pot, sauté onions, garlic, carrots, and celery for about five minutes.
  4. Return beef to the pot; add apple vinegar and tomato paste. Cook for an additional four to five minutes.
  5. Stir in the stock and quartered potatoes. Cover and bake for 3 to 3.5 hours until beef is tender.
  6. Optionally add frozen green beans during the last thirty minutes of cooking.
