Ingredients

Scale
  • 1 cup uncooked long-grain white rice
  • 1 lb ground beef
  • 1 small diced onion
  • 4 minced garlic cloves
  • ½ cup milk
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 3 cups low-sodium beef broth
  • Salt and pepper as needed
  • 1 tsp Italian seasoning
  • 3 tbsp butter

Instructions

  1. In a large skillet, melt 1 tablespoon of butter over medium heat. Sauté the diced onion for about 3-4 minutes until softened.
  2. Add the ground beef to the skillet and cook until browned, breaking it apart as it cooks. Drain excess fat if necessary.
  3. Stir in minced garlic and cook for another minute until fragrant.
  4. Pour in rice, beef broth, Italian seasoning, salt, and pepper; stir well.
  5. Bring to a boil then reduce heat to low. Cover and simmer for 18-20 minutes until rice is tender.
  6. In a separate saucepan over low heat, melt remaining butter and mix in Parmesan cheese and milk until smooth.
  7. Combine the cheese sauce with the beef-rice mixture in the skillet; stir until fully combined.
  8. Cook uncovered for an additional few minutes before serving.
