  • 3 cups butternut squash, peeled and cubed
  • 340 g Brussels sprouts, halved
  • 225 g bow tie pasta
  • 340 g cooked smoked chicken or turkey sausage
  • 5 cloves garlic, minced
  • 2 tablespoons butter
  • Olive oil, salt, pepper, smoked paprika

Instructions

  1. Preheat oven to 200°C (400°F). Toss butternut squash with olive oil, salt, and pepper; spread on a baking sheet.
  2. Toss Brussels sprouts with olive oil, salt, and pepper; place on another baking sheet. Roast both veggies for about 20 minutes until caramelized.
  3. Cook bow tie pasta in salted boiling water until al dente; reserve some pasta water before draining.
  4. In a skillet over medium heat, sauté sliced sausage until browned. Remove and set aside.
  5. In the same skillet, sauté minced garlic until fragrant; add butter until melted.
  6. Combine drained pasta with garlic butter sauce; season with salt, pepper, and smoked paprika.
  7. Fold in roasted veggies and sausage; mix well to combine.
