  • 1 1/2 cups water
  • 1/2 cup granulated sugar (for filling)
  • 2 tablespoons fresh lemon juice

Instructions

  1. Prepare the apricot filling: In a saucepan, combine chopped apricots, water, and sugar. Simmer until apricots are tender. Stir in lemon juice and let cool.
  2. Make the shortbread crust: Preheat oven to 375°F (190°C). Grease a baking pan. Mix flour, sugar, baking powder, and salt in a bowl. Cut in cold butter until crumbly.
  3. Combine ingredients: Add the beaten egg and vanilla extract to the dough until just combined.
  4. Assemble: Press about two-thirds of the dough into the pan as the base. Spread cooled apricot filling on top and crumble remaining dough over it.
